Ingredients

Whiskey Modifier

75 g Dried apricot

75 g Dried fig

40 g Unsalted popcorn

40 g Peat-smoked malted barley

34 g Molasses

30 g American oak chips

30 g Fenugreek seeds

20 g Cinnamon sticks, crushed

20 g Cara-hell malted barley

15 g Toasted American oak chips

15 g Mustard seeds

2 g Sea salt

1 Vanilla bean, whole

1 Banana

Honey & Green Tea Syrup

2 cups Brewed green tea

1 cup Honey

To Serve

2 oz. Vodka

2 oz. Honey & Green Tea Syrup

3/4 oz. Whiskey Modifier

2 Lemon wedges, squeezed and dropped in

1/2 oz. Aquafaba

1 Passion fruit

8 Mint leaves

2 dash Orange bitters

Glassware

Directions

Whiskey Modifier

Preheat oven to 400ºF.

Spread Peat smoked and Cara-Hell Malted Barley on sheet tray and toast for 30 min.

Place whole banana on parchment paper on sheet tray and bake for 15 min.

Remove both from oven and let cool completely.

Slice whole banana in small slices including skin.

Add all ingredients to a sous vide bag.

Seal with a chamber vacuum sealer.

Set the Hydro-Pro to 195°F and cook for 1 hour.

Remove form the bath and set in ice bath to slow the infusion.

Once cool, strain through a fine mesh strainer.

Honey & Green Tea Syrup

Combine the ingredients and stir until the honey is dissolved.

To Serve

Add all ingredients to a cocktail shaker and shake with ice until chilled and diluted.

Strain and dry-shake. Pour over fresh ice.

Garnish with Mint leaves, a thin orange slice, passion fruit seeds.
