Whether you serve this guacamole as an app, side, or condiment - you won't be sorry.

3 Avocados, diced

1/4 cup Charred Scallions, sliced

1/4 cup Pickled Red Onion, minced

1/4 cup Jalepeño, minced

1/2 cup Cilantro, finely chopped

1 cup Tomatoes, seeded and diced

Lime Juice (freshly squeezed), to taste

Coarse Kosher Salt as needed

Mesquite Smoking Wood Chips

Fill the burn chamber of the Smoking Gun Pro with a half teaspoon of Mesquite wood chips.

Cover the mixing bowl tightly with plastic wrap.

Carefully insert the nozzle of the Smoking Gun Pro into the bowl and turn it on to medium-low to ensure that the forceful air does not loosen the plastic wrap.

Ignite the wood chips and fill the bowl with a dense smoke. Allow the guacamole to rest in the smoke for 10 minutes.

After 10 minutes has elapsed, uncover the guacamole and stir in the smokey upper layer. Taste the mixture and repeat the smoking step until the guacamole reaches a smoke profile that you enjoy.
