Ingredients

Spiced Manhattan Batch

16 oz. Rye whiskey

8 oz. Sweet vermouth

1/2 tsp Angostura bitters

1 Cinnamon stick

5 Black peppercorns, whole

3 Whole nutmeg

2 Cloves, whole

1 Star anise, whole

1/2 Peel of Orange

To Serve

2 1/2 oz. Spiced Manhattan Batch

1 Luxardo cherry

1 Orange peel, flamed

Glassware

Coupe, chilled

Directions

Spiced Manhattan Batch

Combine all ingredients in a sous vide bag and vacuum seal.

Set the HydroPro to 150°F and cook for 1hr.

Remove the bag from the water bath and place in an ice bath to stop slow the infusion. Chill completely.

Strain through a fine mesh strainer and store refrigerated.

To Serve

Pour 2.5 oz of the batched cocktail into a mixing glass and stir with ice.

Strain into a chilled coupe.

Garnish with a Luxardo cherry and flamed orange.
